Ten weeks that decide the year
From the first green Souri in early October to the last ripe Barnea before Hanukkah, the mill runs every day the weather allows.
In the groves
Nets, rakes and a lot of hands
Most of our growers still harvest by hand: nets spread under each tree, branches combed with plastic rakes, fruit sorted on the spot. It is slow, but bruised olives start to oxidise within hours.
Larger groves use handheld shakers, never fruit collected from the ground.

Becoming a partner grove
We buy fruit from groves that agree to hand or shaker picking, delivery within six hours and no ground fruit. In return we pay above the regional rate and share the lab results for every batch.
